This is the first Rye we’ve barreled down and the first we’ve bottled. Gazelle Rye is a fascinating grain from Canada, known for its ability to germinate in spring and thrive in cold, low-temperature soils. It offers intense flavor, which is why many breweries use it in small quantities to enhance the flavor profiles of certain beers. Bakeries also favor it for its ability to create textured breads with great depth of flavor. Gazelle Rye aligns with our commitment to working with local and sustainable crops. Notably, it has the most developed root system of any cereal grain, making it both drought-tolerant and beneficial to the soil it’s tilled back into.
The Gazelle Rye was barreled in December 2021 into 4 ReWine barrels and one Oregon Oak barrel. We used only 10% brandy in the blend as we wanted to provide just a touch of the brandy’s sweeter sensation to be a mere backdrop and polishing agent to the incredible flavors in this rye.
For us, as a whiskey, Gazelle Rye is as unique as it gets among a lineup of already distinctive whiskeys. Aromas of sandalwood, pecan, grilled peaches, graham cracker, and dark honey rise easily from the glass, and even at 100 proof, there’s no noticeable heat. The flavors are bold, as you'd expect from a Rye, with notes of mead, ginger, unoxidized roasted Oolong tea, waffle cone, and Mandarin orange rind. The texture is supple, as with all our whiskeys, but with more structure and firmness, fitting for a Rye. This is remarkably complex stuff.
