This is the first Rye we barreled down and obviously the first we have bottled. Gazelle Rye is a fascinating grain originating out of Canada. It is a spring germinator and very tolerant of low temperature soils. It is intensely flavorful and many breweries use it in small quantities to amp up the flavor of certain beers. It is also very popular with bakeries for textured breads with great depth of flavor. This Rye fits in with our desire to work with local and sustainable crops. Gazelle Rye has the single most developed root system of any cereal crop making it drought tolerant as well as good for the soil it is tilled back into. For our purposes as a whiskey this is as unique as it gets in a line-up of thoroughly unique whiskeys. Aromatics of sandalwood, pecan, grilled peaches, graham and dark honey rise easily from the glass and even at 100 proof there is no sensation of heat. The flavors are assertive, as they should be with a Rye, but revolve around mead, ginger, unoxidized roasted Oolong tea, waffle cone and Mandarin orange rind. The texture is supple, as with all the whiskeys, but more structured and firm as one would expect from a Rye. This is amazingly complex stuff. Only 100 cases produced.
