Purchase Full Pint Barley Whiskey
Yet another barley developed by the Barley World program at Oregon State University. This was developed to match the cool Northwest climate and can either be overwintered or spring planted making it something easy for farmers to work with. This strain was developed by combining a highly disease resistant strain with a Czech strain known for being sought after by breweries. It has only been in existence for about a dozen years at this point. We felt like the success Full Pint has enjoyed in the local craft beer scene would translate into something important in a couple of ways for us: 1) That it would be a delicious and relatively easy to produce whiskey and 2) that it would fit a bit more into the cocktail/”shot and a beer” style that our other bottlings are not truly geared for.
This went into barrel in August 2021 and was bottled in November 2024. Made up of 80% Full Pint Barley and 20% Pinot Noir brandy, the whiskey was aged 40 months in 6 re-purposed French oak wine barrels that were all charred to #2 level. The former Pinot Noir barrels were renewed by ReWine, a local company that removes the layer of neutral oak from the interior of the barrel to expose new oak. The barrel is re-toasted to wine barrel specifications and then charred to whiskey barrel levels.
The flavor profile consists of cinnamon, allspice, nutmeg, sandalwood, dry oak, date, sultana, dried fig, cocoa and orange rind. This is the kind of whiskey for sitting on the porch in an old, super-comfortable leather easy chair. This is American Whiskey to a tee. Small batch whiskey at commercial whiskey prices.
